I've owned this '51 Ply cl coupe for a while and I really feel confident driving it.
BUT, I'm thinking that I should be taking spare parts with me. What do you recommend as being essential.

Some of this depends on how far you are planing on traveling with the car.
In your tool box at least have the following:
Spare Points and condensers
Spare Spark plug
Cap and rotor
Small wires that are used in the breaker plate
Get a spare NOS Breaker plate with the points and condenser attached
I would also suggest that you get a 6v gas pump put onthe car and mount this at the back near the gas tank. If your macanical pump goes south thenthe elctric pump will continue to pump gas to the carb. Also this is a good idea to help with starting if you every get vapor lock.
Spare lights bulbs ofor the taillights. Spare tube for the tire. Jug of water.
If you are going for a long trip mabe an extra generator but if the car is a driver and not a show car then witch over to a 6v alternator.
In the tool box several screwdrivers to fir the various types of screw heads, set of wrenches and sockets several jump wires with allegator clips and small testing light to check for circut electric checking.
And whatever you feel that would make you confortable on a long trip. As you drive your car more and more you will get comfortable with it and get to know the quirks of the car.
