Help! Flathead rookie...

I've been a big block kinda person my whole life, but recently purchased two 51 F1's, one running one parts. I wanna stay original but don't know much about flatheads just yet, and don't know anyone that runs one.
Anybody out there feel like sharing some tips about them? Anything a rookie should know?
